WASHA – HOT & FIERY

Washa Peri-Peri Chicken

Serves 4 | Prep 10 mins | Cook 35 mins

Ingredients:
⦁ 1kg chicken thighs or drumsticks
⦁ 2 tbsp Washa sauce
⦁ 2 garlic cloves, crushed
⦁ Juice of 1 lemon
⦁ 1 tsp smoked paprika
⦁ 2 tbsp olive oil
⦁ Salt to taste

Method:
⦁ Mix Washa, garlic, lemon, paprika and oil.
⦁ Coat chicken and marinate for at least 30 minutes (overnight if you can).
⦁ Roast at 200°C for 35 minutes or grill until charred and juicy.
⦁ Finish with an extra drizzle of Washa before serving.

Washa Spicy Mayo

Perfect for fries, burgers & sandwiches

Ingredients:
⦁ 4 tbsp mayonnaise
⦁ 1–2 tsp Washa (to taste)
⦁ Squeeze of lemon

Method:
Mix everything together. Taste. Add more Washa if you dare.

Fiery Tomato & Bean Stew

Hearty, warming, deeply spiced

Ingredients:
⦁ 1 onion, chopped
⦁ 2 garlic cloves
⦁ 1 tbsp Washa
⦁ 2 tins chopped tomatoes
⦁ 1 tin butter beans
⦁ Olive oil, salt

Method:
⦁ Fry onion and garlic until soft.
⦁ Stir in Washa and cook for 1 minute.
⦁ Add tomatoes and beans, simmer 20 minutes.
⦁ Serve with rice or flatbread.

Green Chilli Cheese Toastie

Golden, melty, addictive

Ingredients:
⦁ Sourdough slices
⦁ Butter
⦁ Cheddar & mozzarella
⦁ 1–2 tsp Moto

Method:
⦁ Butter bread, spread Moto on the inside.
⦁ Add cheese, sandwich together.
⦁ Fry until golden and molten.

Moto Green Chutney

A fresh all-rounder

Ingredients:
⦁ 1 bunch coriander
⦁ Handful of mint
⦁ 1–2 tbsp Moto
⦁ Juice of ½ lime
⦁ Pinch of salt

Method:
Blend everything until smooth. Use with curries, grilled veg or snacks.

Moto Chilli Oil Pasta

Weeknight heat in 15 minutes

Ingredients:
⦁ Pasta of choice
⦁ 2 tbsp olive oil
⦁ 1 tbsp Moto
⦁ Garlic, sliced
⦁ Parmesan (optional)

Method:
⦁ Cook pasta.
⦁ Gently heat oil and garlic.
⦁ Stir in Moto, toss through pasta.
⦁ Finish with cheese and black pepper.

BOMBA – TANGY & FRUITY

Tropical Fish Tacos

Bright, fresh, lightly spiced

Ingredients:
⦁ White fish fillets
⦁ 1 tbsp Bomba
⦁ Lime juice
⦁ Tortillas
⦁ Mango salsa, cabbage

Method:
⦁ Pan-fry fish with Bomba and lime.
⦁ Flake into tortillas.
⦁ Top with mango salsa and cabbage.

Bomba Spicy Prawn Skewers

Sweet heat with a citrus kick

Ingredients:
⦁ Raw prawns
⦁ 1–2 tbsp Bomba
⦁ Garlic
⦁ Olive oil

Method:
⦁ Marinate prawns 15 minutes.
⦁ Skewer and grill until just cooked.
⦁ Serve with lemon wedges.

Lightly Spiced Chicken Salad

Fresh, zesty and warming

Ingredients:
⦁ Cooked shredded chicken
⦁ 2 tbsp Greek yoghurt
⦁ 1 tbsp Bomba
⦁ Lemon juice
⦁ Fresh herbs

Method:
Mix everything together. Serve in wraps, bowls or sandwiches.
